Primitivo, the warm song of the earth.
Once Luigi Veronelli said that "Wine is the earth's song towards heaven". Inspired by his words we can say that Primitivo, the excellence of Apulian and Salento viticulture, is a warm and enveloping song.
Here, on the Ionian coast of the ancient land of Salento, a few kilometers from Manduria, between Leporano and Lizzano, is the birthplace of the Primitivo of Masseria Capoforte. The melody radiates with the warm force of the sun, lighting the wonder of the colors of nature. A range of shades ranging from the light blue of the sky, to the red of the earth, to the blue of the deepest sea.
The strength and the music of nature, distinguishes the score of our Primitivo. Here, the peculiar notes are those of an important sugar dowry, the introduction for an alcoholic value of absolute respect. In the meantime, the bluish color of the beans is the declaration of high anthocyanin content. It is precisely the latter, present in the skins, which in the maceration phase gives our Primitivo that deep ruby red color characteristic. After the harvest at the end of September, in fact, the crushed and de-stemmed grapes are placed in tanks in contact with the skins for a period of 5/7 days during which reassembly, punching down and delestage (rack and return) are done alternately. At the end, with the racking, the wine is decanted and fermented at a controlled temperature.
Afterwards, the subsequent aging in wooden barrels adds to the complexity of our Primitivo, where aromas of small red fruits accompanied by black cherry and plum already stand out, and other olfactory notes, such as cocoa, coffee and vanilla, give it also an important aromatic suggestion.
The taste of the Primitivo signed by Masseria Capoforte, expresses all its warmth and body, persuasive, soft and a round prodigal of noble tannins and a balanced acidity. Rich like the sun that matured it, and fresh like the depth of the sea, it has a finish reminiscent of the olfactory notes of cocoa, coffee and vanilla.
With such a strong personality, our Primitivo prefers encounters capable of balancing tannins and power. Therefore the ideal menus are those of red meat, roasted, grilled, game, braised and long-cooked stews. Excellent with aged cheeses such as pecorino and Parmigiano Reggiano. For structure and roundness it is an incomparable companion also as a meditation wine.
